...are the hotels quite strict with the check in times or will we be able to check in early? Arrive at the resort at 12pm and I have been told we can't check in until 3.

I guess it depends if it's a busy season or not. When we visited last September we arrived at 2 pm and we were given our room upon arrival.

Don't worry! You can check in at any time you want. Even in early morning. We always try to arrive the first day as soon as we can so we can spend almost all the first day in the park.
They give you the park tickets and all the others thinghs, so you can join the magic immediately!
If the room isn't ready you can leave your luggage for free at the "bagagerie" of your hotel.

We always arrive before 3pm, and never had a problem with check in. We always got the roomkeys to. ( usuall yare there beetween 12:30 and 13:00pm.

Dont worry. You can check in any time and leave your bags in various storage areas or lockers depending on your hotel. You wont be able to access your room but will be able to pick up your park tickets choose your breakfast slot and organise anything else you need. When you come back from the park later its just a case of collecting your keys and left luggage and finding your room. We arrived once at 7.30am picked up our passes and still  managed to have breakfast at the hotel before catching the EMH and then returned to collect our keys after dreams!
