I asked for my steak 'very very well done no blood' in Bistrot Chez Remy and whilst it was still a little pink inside, the blood wasn't running out so I could eat it.

I would find out what the French for 'no blood' is and emphasise you want it very very well done and if it's not right, send it back.  I know it's a problem in France because they never cook their steaks right the way through!

That simply isn't how the French cook steak nor how they learn to cook it - to them that is over cooked and ruined. Personally I have steak done medium at most so I've no problem with how they cook it but if you're going to order steak there I think you have to be prepared ask for it to be taken back. What you consider 'well done' and what a French chef considers 'well done' are likely two very different things.

The red liquid you see is not actually blood so it would probably be better to be able to tell them, 'no pink' as this might avoid any further confusion.
