Hi, this has probably been asked loads before.  But is there an easy way to book the character breakfasts or is it only by telephone? Also, is it correct that this can only be booked 3 days in advance, it doesn't seem to mention that anywhere however that is what we are being told.....?

If you aren't staying at a Disney hotel then you can only book 3 days in advance.

If you are then you need to add it to your booking. You can add it when you first book online otherwise you need to phone to amend your booking. Don't just phone restaurant reservations as they can't do it.
