Does the eurostar station stay open all night also does the shopping centre have a 24 hour facility. My train back is 9am, so i plan on checking out the night before as late as i can.

What time can you check out at latest at teh Hotel Cheyenne?

I don't know about the Eurostar sorry but checkout for all the Disney Hotels is 11am, however if the hotel is not too busy you can request at reception to keep your room till 1pm. This isn't guaranteed but I have done it on 3 separate trips at 3 different hotels and it's not proved to be a problem.

I believe you can stall check-out by paying some amount?

I think I read that somewhere not too long ago.

Wouldn't it have been easier to have gotten a night at the hotel extra? (or a cheaper hotel nearby?)

The TGV Station closes after the last train, at around 8 or 9pm and gets locked up securely.
