Hello! I'll try & help as best I can. I don't have children so therefore don't need to pay for others while away.
This link http://www.dlpguide.com/planning/dining/restaurant-menus/ is for menus of everywhere to eat in the park, so hopefully that can help in terms of budgeting money for food.
Merchandise to me falls into 2 categories: some stuff is reasonable & to me others is over priced. For example a standard autograph book is 7.99 & the pens are all 3.99.

Hope this kind of helps you :)

When we went in June (2 adults 2 children aged 4 & 6) we took €1000 and came back with €150. We didn't scrimp on anything, didn't have a dining plan so were paying for 2 meals a day. We ate in Chez Remy, Lucky Nuggget twice, Rainforest Cafe, Anette's. The kids had their own spending money that they had saved (€150 each) and we still bought extras, plus drinks and snacks. We could have done it cheaper but we said as we had saved the money we would spend it!

Instead of taking loads of cash, have you thought of using credit card instead? Some (Halifax and Nationwide for example) offer better rates than you would get if you exchanged Pounds for Euros cash.

We usually spend approx. 120€ per day on food and drinks per person and maybe 50€ for merchandise per trip.

120€ a day each on food and drink?! That seems a lot to me - but I'm tight and take in my own snacks!

Maybe I'm the reason DLP doesn't make a profit.

Going to restaurants twice a day usually the more expensive ones plus some soft drinks in the parks.

This holiday we've worked on €50 per family for lunch using counter restaurants & €100-€200 per family for evening meal depending on where you want to eat. Table service will cost you more. The amount of spending money after that depends on what you want to spend it on.
