I remember thinking it was very watered down when I last saw it. We are in the park thus week, my friends aren't fussed and I'll only see it if it's the good version  again (but I can't really ask that at guest services!)

I'm not sure what "the good version" is. I saw it last during Halloween last year and it included Lightning McQueen, the burning motordriver-stunt, the "let someone from the audience drive a car by remote control", the flower-truck-scene, the "jump through the glass"-scene and the finale with the burning water and the car jump.
Not sure if that helps you at all to be sure  but it might...

I think you get a 'watered' down version if the weather is bad for safety reasons.
