Can anyone be so kind to explain how the meal plans are used please?

Currently it's quite simple (note, this may change if Disney starts charging for breakfast, as those will probably add a voucher to plans for breakfast only).
If you have a half-board plan you get 1 voucher per day per person on the booking.
If you have full-board you get 2 vouchers per day per person on the booking.

The vouchers can be used as full payment at the restaurants listed for their level, or as partial payment at restaurants above their level (there are exceptions, the California Grill is on the Premium plan for instance, but only the prix fixé menu is, if you go à-la-carte there you'll use your premium voucher as partial payment instead).
Usually the plan includes one non-alcoholic drink. So wine or cocktails are not included.

Each plan also includes 1 Pause Gourmande voucher per person per day, those can be used for a snack or drink I think. The selection is usually quite limited, and not all snack locations have voucher compatible choices.

Meal Plans:

These are a way of pre-paying for some of the meals for your trip. You will get the vouchers when you check in at the hotel or on the Eurostar if you have paid for the Disney Express service.

You currently have two types of boards - Half Board and Full Board. There are 4 tiers of meal plans: Hotel, Standard, Plus and Premium. At the moment breakfast is included in the cost of your Disney hotel and package (unsure about Davy Crockett Ranch currently).

Half Board - You get 1 voucher per person for each night of your stay.
Lunch: You can pay for your lunch by cash or card. Dinner: Use your voucher.

Full Board - Half Board - You get 2 vouchers per person for each night of your stay.
Voucher for Lunch and another voucher for Dinner.

When you use your meal plan voucher -  you tell the cast member in the restaurant that you have meal plan vouchers that you want to exchange (a straight swap - voucher for a meal) - the cast member will advise you on what set meal/options you have for your voucher swap.
OR use the voucher as part payment towards the meal and you will pay the rest in cash/by card.

For Hotel Meal Plans:
The Lunch Meal Voucher allows you to choose a set menu option at any "fast food" Counter Service restaurant in the Disney Parks. Or, if you're staying at Disneyland Hotel, you can choose any Buffet Service option.
The Dinner Meal Voucher allows you to dine at your Disney Hotel only.

For Standard, Plus and Premium Meal Plans:
Both Meal Vouchers allow you to enjoy a meal in any available listed restaurant.

• Some restaurants may be closed during certain periods; we therefore strongly advise you to book your meals in advance, by calling our restaurant booking service on +33 (0)1 60 30 40 50 (International call rates will apply)
• Specific menus are available. Please contact us for more information
• Valid Disney Parks entry tickets are required for access to restaurants within the Disney® Parks
• The type of meal plan purchased prior to your arrival at the same time the package is booked, must be the same for the entire length of the stay and for the entire party
• Meal plan vouchers and "Pause Gourmande" are not valid on 24th and 31st December.
• The teatime treat (Pause Gourmande) is not combinable with any other offer or discount applicable on Half Board or Full Board Meal Plans (unless otherwise stated).

• Meal vouchers are accepted in all Disney Park and Disney Hotels restaurants and in some Disney Village restaurants (except McDonald's®, Planet Hollywood®, Rainforest Cafe®, King Ludwig's Castle®, Starbucks®, Earl of Sandwich®), for their monetary value for a meal including a starter, a main course, a dessert and a soft drink, or for an all-you-can-eat buffet with a soft drink:
-If the price of your meal exceeds the value of the voucher then you must pay the difference (see conditions in the restaurants)
-No refund will be given if the price of your meal is lower than the value of the voucher
-Limited to one meal voucher per person per meal

You can also use your voucher in a lower value restaurant but you will not be using the full value of the voucher (no change given).
