My OH and I love breakfast in the hotels when at DLP (it's our favourite meal of the day!). We are looking at getting AP's this year and would therefore book hotel rooms on their own without park tickets but how does breakfast work with this? Is this something you have to book separately and, if so, what is the rough cost? TIA!

you have to book the breakfast separately, you can do this at check-in.
I found someone who reported the prices in October 2016, to give you a rough estimate. I imagine all prices have gone up a bit since then:
Santa Fe 11€ adult, 7€ child.
Cheyenne 11€ adult, 7€ child.
Sequoia Lodge: 13€ adult 10€ child.
Newport Bay: 25€ adult, 10€ child
New York: 25€ adult, 10€ child.
Disneyland Hotel: 40€ adult, 20€ child.

Here are the correct breakfast prices at the hotels, at this time
Davy Crockett ranch: 10 EURO'S, Santa Fe: 19 EURO'S, Cheyenne: 19 EURO'S
Sequoia Lodge: 22 EURO'S, Newport Bay: 26 EURO'S, New York: N/A because it closes
Disneyland Hotel: 34 EURO'S
Perfect, thank you for these. We have just booked a one night stay at the davy crockett- is their breakfast a takeaway bag do you know? Sounds a lot less price than the other buffet breakfasts.
If your AP happens to be a Magic Plus or Infinity then do not book the breakfast at check-in! With those APs you are entitled to the AP discount for restaurants (-10% Magic Plus, -15% Infinity) which does apply to Disney Hotel breakfast as well. Just go to the restaurant, show your AP and pay there. At check-in (or if you book breakfast in advance online or by phone) you will pay the full price.
