I have just booked with the free half board offer to Disneyland Paris. Does anybody know which set menus are for plus dining guests because it doesn't say on the menus apart from the Yacht Club? :) And do you still get the full price of the evening meal even though you get a breakfast voucher as well?

If you check places like annettes , silver spur, chez Remy there's a little cup and saucer type symbol which says premium or plus. X
There's a chart showing which restaurants, I think in the online brochure.
The breakfast voucher has no bearing on the evening meal. The evening/daytime meal will be from a set menu in some restaurants (look for the cup and saucer symbol) or for a buffet in others. If you want something else from the menu or to use a more expensive restaurant, like Buffalo Bills, you can use the voucher in part payment.
