Going August 31- 4 September, my daughter is obsessed with everything Disney and wants to meet everyone
Are we likely to see characters just walking around to get pics and autographs? I know some have their own meet places and times.
Also where can she see princesses in the parks? She wants to see so many and I don't want her to be disappointed

A lot can change in those 6 months.
Currently there are a tons of characters to meet, both announced as random. We were able to meet 28 characters in 2 days of Disneyland Paris.
There should be princesses to be met for sure (can't imagine them closing down Princess Pavillon)

I met a few characters wednesday. Got to the park at 9am. Met a few characters , ambled about and didnt get on my first ride until 3pm!
I met 97 (including repeats and many of them :p) in 5 days last October, Halloween seems to be the busiest character wise.

We did most rides as well. Visiting the parks on a weekday in late January/early February makes it easier.
I managed to meet 29 different characters in just 1 day in September.
So its definitely not impossible.
There are currently loads of characters out, and they are here to stay until December.
So you're good with August.
However just walking around wont be that often.
The random unscheduled characters tend to be more out when its quiet.
Since August is one of the busiest times, dont count on many random characters.
But there are A LOT of them scheduled.
Princesses are at the Princess Pavillion.
But in terms of your daughter not wanting to be disappointed is a matter of good parenting. If you make clear not to get her hopes up, she also wont be disappointed.
