I am planning for an upcoming trip to the parks. We will be taking advantage of Extra Magic time and I'm wondering what we can realistically expect to ride in that hour. What are the queues like during Extra Magic time? Is it basically walk on (or a short wait) or does something like Peter Pan still build up a noticeable queue?

Peter Pan will still build up a queue reasonably quickly so it's always a good idea to go straight there as soon as EMT starts. Other rides are often then just walk on although of course it depends when you go.
It all depends on when you're going.
If you're going in the off season, you might actually be able to do all the rides open for EMH, but only if you get to the park when it opens and go straight for the rides. But during ultimate off season, it can be done.
During busier/peak season, just go straight for the rides you really want to do during EMH because they'll go from 5 minute queues in the first half hour (or 20 minutes depending how busy it is exactly) to up to an hour by 10am. In that case you'll realistically be able to do a few rides, but not the lot of them.
I must admit that I'm speaking about EMH in the Disneyland Park, I've never done them in the Studios Park so I wouldn't know how easy it is over there.
