When I was there last year my phone connected to the strongest local network.

It doesn't matter what network your phone is on as it will connect to the strongest French one.

...assuming your UK provider has a partnership agreement with that network. For example, 3 has partnership agreements with Free and Bouygues, but not with SFR or Orange, so if your UK phone is on 3 it'll only connect to those first two.
