I've booked to stay at the Santa Fe hotel for 2 people, 5 nights, 6 days. The reservation confirms park tickets for 6 days, I'm assuming this will be 6 days per person? Would that be right?

Yes you can hop backwards and forwards as much as you like.
You don't need to get your hand stamped either, at least not with the tickets you get as part of a hotel package deal. You can just use those tickets to come and go in both parks as many times as you like for all the days that they are valid.
you will get a two park ticket per person, which will allow access to both parks for the dates of your stay as the others have said. You don't need to enter the parks together. Each person and come and go as you please, in both parks.
You will also get a hotel pass, which gives access to the special early opening for hotel guests, which is called Extra Magic Hours You get one of these coupons , which must be shown to the CM at the gate.
Yes, that is 6 days per person, valid for both parks an you can hop as many times as you wish. You pick up the park tickets at check-in with the hotel. This can be done any time on arrival day, even if your room is not ready you will be given your tickets. Luggage can either be left in your car or stored with bell service.
The Hotel Easy pass can also be used for charging, but you have to request that an check-in. They will swipe your credit-card and at the end of your trip an envelope with The Bill will be hanging on your door. The balance is charged to your credit-card, so no hassle and no check-out needed.
