I'm sure this has been asked before, but is there a simple "tipping point" at when an annual pass becomes worthwhile financially? Do you need to do 2 trips in a year or be staying for 3 nights or more or something?

Any more than 3 days and you'll make it worthwhile, very underpriced for the pass :)

Obviously dependent on which pass but there aren't many blockout dates.

I went with my brother in law to disneyland for 3 days, we would have  liked to buy the francilien pass for him, because it was cheaper than buying three tickets. But in fact it's misleading, because with francilien you have a blockday the very next day you purchase the pass. The fantasy pass is a little bit more expansive, but worth wile
