We did it we booked for October, but I have never been during Halloween. What light/ evening show will be on the castle? Will it be the New 25th Disney Dreams or a Halloween based one? I really wanted to see the 25th one..

It'll be the 25th anniversary show, Disney Illuminations. The only night they have anything different is 31 October at a special ticketed event.
