It's definitely NOT all of these at the same time. That's only during Christmas season.
The rest of the year it will just be 3/4 of these, and in their standard outfits.
There's no way of telling which ones it'll be, you're just gonna have to see to find that out.

Restaurants aren't open during EMH except sometimes the ones that sell muffins and cookies. As far as lands are concerned only Discovery and Fantasyland are open and of course you can roam freely around Main Street USA. Open rides are usually Peter Pan's Flight, Mad Hatter's Tea Cups, Dumbo, Lancelot's Carrousel in Fantasyland and Orbitron and Buzz in Discoveryland now that Space Mountain is undergoing refurbishment. You can meet Mickey, Minnie, Pluto, Goofy, Chip and Dale on Main Street but not all of them are out on the same day.

Au Chalet de la Marionette is only open for people with breakfast vouchers for it.
Same goes for Plaza Gardens and Pizzeria Bella Notte.
For "normal" guests it's only Cable Car Bakeshop and Marktet House Deli.

And I don't know why you crossed Peter Pan's Flight out, but it's part of EMH too.
For tomorrow specific Dumbo the flying Elephant is under refurbishment, but it's normally part of it too.
I also don't know why you added Star Tours, since that is NOT part of the EMH.
And it's also not added, as a replacement for Space Mountain or something.
